A Rare Find for the Spelt Connoisseur | 25 lbs

Introducing the best of the best—a truly rare find on the American spelt market. Our White Spelt Flour is milled from organically grown Oberkulmer, an ancient, traditional variety of true spelt (Triticum spelta) valued for its exceptional quality and delicate character.

It is organically grown and handled in a certified organic facility, with careful attention to preserving the purity and integrity of this remarkable ancient grain.

To further ensure its quality, samples of our spelt have been submitted for independent laboratory testing and tested negative for herbicides, pesticides, and heavy metals.

If you love to spoil your family with something wonderfully soft, light, and delicious while still choosing wholesome ingredients, this is the flour to reach for. Its beautifully fine texture opens a whole new world of possibilities for baking with spelt.

Delicate, Yet Naturally Nourishing

By removing most of the outer bran during milling, we create a remarkably fine, light flour without changing the grain at its heart. Spelt remains spelt. Even in its refined form, it naturally provides protein, carbohydrates, vitamins, minerals, and other nutrients inherent to the grain.

Spelt has long been treasured for its gentle character and digestibility. In the Hildegardian tradition, finely milled white spelt flour is especially appreciated for those who prefer a lighter flour, including children and people with sensitive digestive systems.

St. Hildegard regarded spelt as an exceptionally valuable food, describing it as nourishing, strengthening, and easier to digest than other grains. Its natural composition and water-soluble components allow the grain to be readily incorporated into a varied, nourishing diet.

Discover a New World of Baking with Oberkulmer Spelt

This flour brings an entirely different experience to baking with ancient spelt. Fine, silky, and wonderfully light, it creates tender textures while preserving the distinctive, subtly nutty flavor of Oberkulmer spelt.

Use it for fluffy breads and rolls, delicate croissants and pastries, cakes, angel food cake, cookies, pancakes, waffles, pasta, and other fine baked creations.

When whole spelt flour feels too hearty and you want something exceptionally delicate, White Spelt Flour gives you the lightness you are looking for without giving up the ancient grain you love.

Our generous 25 lb bag is an excellent choice for families who bake regularly, passionate home bakers, and anyone who has made ancient spelt a staple in their kitchen. It offers a convenient way to keep a plentiful supply of this exceptional flour on hand for everyday breads, homemade pasta, pastries, and special baking projects.

Try it—you may discover an entirely new side of spelt.

A Note About Wheat and Gluten Labeling

You may notice that our packaging states "Contains Wheat and Gluten." This labeling reflects U.S. allergen-labeling requirements because spelt (Triticum spelta) is scientifically classified as a type of wheat and naturally contains gluten.

However, we want to reassure our customers that our flour is made exclusively from 100% Oberkulmer spelt grain, with no common wheat added. Oberkulmer is a traditional, ancient variety of true spelt, valued for its distinctive characteristics and nutritional qualities.

We also take special care in how our spelt is processed and handled. Our spelt products are processed using machinery that is not used for common wheat. Additionally, the equipment and tools are thoroughly cleaned before handling our spelt to minimize the risk of cross-contact and help preserve the integrity of the grain.

The wheat declaration on our label is therefore a legal allergen-labeling requirement and does not mean that our flour contains a mixture of spelt and modern common wheat.
