Diptam is one of the most valued spices in Hildegard’s kitchen. This precious powder can be used in a variety of ways—stirred into drinks, added to cooked meals like soups, sauces, or pasta bakes, or sprinkled over uncooked dishes, especially those served with spelt bread. It is measured out in pinches.
