Our Chestnut-Spelt Ridged Pasta is made from true ancient Oberkulmer Rotkorn spelt, grown in Poland and processed in small batches, blended with sweet chestnut flour and shaped with delicate ridges that beautifully hold butter, herbs, sauces, and the richness of a good broth.

St. Hildegard wrote that spelt is “good and tasty” regardless of how it is prepared. We tend to agree. There is a richness and nutritional depth to true ancient spelt that modern wheat simply no longer carries.

The addition of chestnut brings a gentle sweetness and earthiness that feels almost old world. Quietly luxurious. St. Hildegard says of the sweet chestnut, “Everything in it is useful.”

The subtle flavor of this chestnut and spelt pairing complements browned butter, garden herbs, roasted apples, cherries, raspberries, or simply a drizzle of sunflower oil and freshly grated Parmesan cheese. It is especially beloved by children. 

This is the sort of pantry staple that turns an ordinary evening into something restorative. 

Ingredients: Oberkulmer Rotkorn spelt flour (type 650), chestnut flour, eggs, water. 

CONTAINS EGGS.

Preparation: Add to generously salted boiling water and cook gently for about 5 minutes, until tender. Drain and serve warm.

Store in a cool, dry place.
