Poultry Burger Patties the Hildegard's Way

Ingredients

  • 2 lb ground turkey or ground chicken
  • 2–3 garlic cloves, minced
  • 2 medium onions, diced
  • 1 carrot, grated
  • 1 parsley root or celery root, grated
  • 1 lb cooked green or yellow beans, chopped
  • 1 egg
  • 2 tbsp sunflower oil, for sautéing
  • Sea salt, to taste
  • 1 tsp Bertram
  • 1/2 tsp Galangal

Choose one or more of the following herbs:

  • Hyssop
  • Mint
  • Sage
  • Summer savory
  • Wild thyme

Instructions:

  1. Dice the onions, mince the garlic, grate the carrot and parsley root (or celery root), and finely chop the cooked green or yellow beans.
  2. Heat the sunflower oil in a large skillet over medium heat. Sauté the onions and garlic until translucent, about 4–5 minutes.
  3. Add the grated carrot and parsley root (or celery root). Cook for another 3–4 minutes until slightly softened.
  4. Stir in the chopped beans. Season with sea salt, Bertram, Galangal, and your chosen herb or herb blend. Cook for 2–3 more minutes, stirring occasionally. Remove from the heat and let the vegetable mixture cool for about 10 minutes.
  5. In a large bowl, combine the ground poultry, cooled vegetable mixture, and egg. Mix gently until everything is evenly incorporated. Avoid overmixing to keep the patties tender.
  6. Shape the mixture into 8–10 equal patties, about ½ inch thick.
    Heat a lightly oiled skillet over medium heat. Cook the patties for approximately 5 minutes per side, or until nicely browned and the internal temperature reaches 165°F (74°C).
  7. Serve warm on a fresh spelt bun with your favorite toppings, or alongside seasoned cooked chopped spelt for a nourishing Hildegard-inspired meal.

Hildegard's Way Tip

For even more flavor, let the seasoned meat mixture rest in the refrigerator for 30 minutes before shaping the patties. This allows the herbs and spices to infuse the meat and helps the patties hold together during cooking.
