Honey-Spice-Roasted Almonds

Ingredients
- 2 cups whole almonds
- 1/4 cup unrefined cane sugar
- 1/2 tsp sea salt
- 3 tbsp good quality honey
- 3 tbsp water
- 1 tbsp almond oil (or sunflower oil, or coconut oil)
- 1 tsp bertram
- 1 tsp galangal
Instructions
Scatter almonds evenly on a single layer baking sheet and place in a cold oven. Heat oven to 350 degrees F (175 C). Roast almonds, stirring from time to time for 12-15 minutes (until lightly browned).
In the meantime, mix sugar, salt, galangal and bertram in a bowl. Sprinkle 1 tbsp sugar mixture into a large bowl.
Stir honey, water, and almond oil together in a saucepan; bring to boil. Add almonds. Continue to cook almonds stirring until they have absorbed all the liquid (5-7 minutes).
Transfer coated almonds to the large bowl and sprinkle with sugar mixture. Sprinkle remaining sugar with spices over almonds, toss to coat evenly.
Transfer the almonds on to a waxed paper to cool completely.
Store at room temperature in a tight container.
