Hildegard's Classic Habermus: The Ultimate Morning Power Boost

Ingredients:
- 1 1/4 cups water
- 1/2 cup fine habermus (spelt groats)
- Pinch of salt
- 2-3 pinches of bertram and galangal
- A few dashes of Ceylon cinnamon
- 1 apple, peeled and cubed
- Raisins (to taste)
- Honey (to taste)
- chopped almonds (optional)
Instructions:
- In a small saucepan, bring the water to a simmer and add the spelt groats. Cover and cook over low heat for 10-12 minutes.
- Halfway through cooking, add the cubed apple, raisins, and spices (bertram, galangal, and cinnamon).
- Continue cooking until the spelt groats have absorbed the water and are tender.
- Transfer to a bowl, drizzle with honey to taste, and garnish with a fresh mint leaf.
