Hildegard's Classic Habermus: The Ultimate Morning Power Boost

Hildegard's Way

Ingredients:

  • 1 1/4 cups water
  • 1/2 cup fine habermus (spelt groats)
  • Pinch of salt
  • 2-3 pinches of bertram and galangal
  • A few dashes of Ceylon cinnamon
  • 1 apple, peeled and cubed
  • Raisins (to taste)
  • Honey (to taste)
  • chopped almonds (optional)

Instructions:

  1. In a small saucepan, bring the water to a simmer and add the spelt groats. Cover and cook over low heat for 10-12 minutes.
  2. Halfway through cooking, add the cubed apple, raisins, and spices (bertram, galangal, and cinnamon).
  3. Continue cooking until the spelt groats have absorbed the water and are tender.
  4. Transfer to a bowl, drizzle with honey to taste, and garnish with a fresh mint leaf.
