Habermus with Goat Milk - hearty breakfast
Hildegard's Way
Ingredients:
2 cups of goat milk (best is raw or low-heat pasteurized, expiration date no longer than a week)
3/4 cup habermus (spelt groats)
pinch of ceylon cinnamon, nutmeg, cloves
salt, honey to taste
Instructions:
Pour milk into a saucepan and heat over medium until it begins to boil.
Reduce the heat to low and add the habermus (spelt groats).
Simmer on low for 10-12 minutes, stirring occasionally to prevent sticking.
Add Ceylon cinnamon, nutmeg, or cloves, and stir well.
As the groats absorb the moisture, the milk will thicken.
Transfer to a bowl and sprinkle with chopped almonds.
