Easy Apple Layer Cake

- 1 deep frying pan
- 1 standing mixer
- 1 measuring cup
- 1 kitchen scale
- 1 baking dish 9 x 13 inch
Ingredients
- 5 large eggs
- 3/4 cup cane sugar
- 120 ml sunflower or grape oil
- 50 ml milk
- 250 g light spelt flour
- 1 tsp baking powder
- Apple filling
- 8 apples
- 2 tbsp cane sugar
- 1 tsp cinnamon
- 1 tbsp potato starch
- 2 tbsp lemon juice
- 1/5 cup water
Instructions
For the Apple Filling: wash, peel, core and grate the apples. Place the grated apples in a deep frying, add the cinnamon, sugar, lemon juice and move the pan to the stove top. Set on a medium heat. Cook the apples for a 5-8 minutes. Let some moisture evaporate. Mix the potato starch with the water and add to the cooking apples. Stir well to avoid lumps. Remove from the heat, let it cool.
Set the over for the 375F
For the sponge cake: break entire eggs into the mixing bowl of the standing mixer. Add sugar. Beat on highest speed until the yellow foam is created. It should triple its volume. It will take about 7-10 minutes. When the batter becomes shiny, add slowly oil, followed by the milk. Next reduce the speed and add flour mixed with the baking powder. Do it spoon by spoon. There will be visible air bubbles in a batter.
Line the baking dish with the parchment paper. Pour half of the batter into the baking dish, spread evenly. Bake for about 15 minutes until golden brown.
Remove from the oven. Cover the first layer with the apples. Pour the other half of the batter over the apple layer. Put it back into the oven and continue to bake for another 30 minutes, until golden brown.
Remove from the oven. Let it cool off. May be dusted with the confectioner's sugar.
