Cookies of Joy! Christmas Version

Hildegard's Way

Ingredients:

  • 3 cups light spelt flour (type 650)
  • 1 cup chestnut flour
  • 1 cup unrefined cane sugar
  • 1 cup almond meal
  • 2 egg yolks
  • 1 whole egg
  • 250 g (17 tbsp) butter, softened
  • 1 tsp Ceylon cinnamon
  • 1/2 tsp nutmeg, powdered
  • 1/4 tsp cloves, powdered
  • 1/2 tsp galangal powder
  • 1/2 tsp bertram powder
  • 1 tsp baking powder
  • 3 tbsp sour cream
  • 1 pinch of salt

Directions:

  1. Combine all ingredients in the bowl of a stand mixer fitted with the paddle attachment or flex-edge beater.
  2. Start mixing on low speed (speed 1) for 1–2 minutes. Gradually increase to medium-low speed (speed 2) and mix until a soft, cohesive dough forms.
  3. Shape the dough into a ball, wrap it, and refrigerate for 30 minutes.
  4. Divide the chilled dough into 3–4 portions. Roll out each portion to your desired thickness and cut into shapes using cookie cutters.
  5. Arrange the cookies on a baking sheet lined with parchment paper.
  6. Bake in a preheated oven at 375°F (180°C) for 20–25 minutes, or until golden.
  7. Allow the cookies to cool on a wire rack before serving.
