Tomato Soup with Spelt Habermus

Hildegard's Way

Ingredients:

2 onions, chopped

1/4 large fennel bulb, chopped

2 large carrots, grated

Small piece of celery root, grated

3.5 liters of water

1/2 - 3/4 cup spelt habermus

1/2 - 3/4 cup tomato sauce

1/2 tsp galangal

1/2 tsp bertram

1/2 tsp wild thyme

1/2 tsp hyssop

1/2 tsp dried lovage

Salt and pepper to taste

Instructions:

  1. Sauté the Aromatics:
    In a large pot, sauté the chopped onions and fennel over a low flame until they turn glassy.

  2. Cook the Vegetables:
    Add the grated carrots and celery root, cover, and let them cook for another 5 minutes.

  3. Simmer the Soup:
    Pour in the 3.5 liters of water and bring to a boil. Stir in 1/2 to 3/4 cup of spelt habermus and let it cook for 25-30 minutes.

  4. Add Tomato Sauce & Seasoning:
    Stir in 1/2 to 3/4 cup of tomato sauce, mix well, and bring the soup back to a boil. Add galangal, bertram, wild thyme, hyssop, dried lovage, salt, and pepper to taste.

  5. Serve Warm:
    Enjoy your hearty and nourishing tomato soup with fresh bread or as a standalone meal.
