Mother’s Love Spelt Bread: Buns, Rolls & Loaf

Ingredients
- 400 g Light Spelt Flour Type 650
- 1 cup water
- 20 g fresh yeast or 10 g dry yeast
- 1 tsp salt
- 1 tsp brown sugar
- 1 egg for egg wash
Directions
- Prepare the flour.
Sift the spelt flour into a large bowl. - Prepare the yeast.
For fresh yeast, crumble it into a small bowl, add the brown sugar, and pour over the water. Stir gently until dissolved. - If using dry yeast, keep in mind that active dry yeast should be proofed in warm water before use, while instant yeast can be added directly to the dry ingredients.
- Make the dough.
Combine the flour with the water and yeast mixture. Add the salt and knead the dough thoroughly. Don’t rush this step. Take your time with the kneading. The technique and patience you put into the dough will make a difference in the finished bread. Knead slowly and gently, allowing the dough to stretch and develop. - Let the dough rise.
Shape the dough into a ball, cover, and set aside in a warm place to rise for approximately 1 hour, or until noticeably increased in size.
Knead again.
Once the dough has risen, knead it again—slowly, carefully, and with love. This second kneading helps create a light, airy texture. - Shape and bake.
Shape into one large roll or 10 small rolls and place on a baking sheet. Brush the tops with egg wash. - Bake at 400°F (200°C) for approximately 25 minutes, or until beautifully golden and baked through.

One small technical note: 1 cup of water is about 237 g, which gives a fairly wet dough for 400 g of spelt flour. Depending on the exact flour and how your Mom makes it, you may want to reserve a little of the water and add it gradually.
