Donut-Like Spelt Pancakes

Ingredients
- 500 g light spelt flour
- 1 tsp salt
- 2 tsp dry yeast
- 1 egg
- 500 ml lukewarm milk or water
- Coconut oil (for frying)
Instructions
- Prepare the dry ingredients
Sift the spelt flour into a large bowl. Add the salt and dry yeast, and mix gently. - Add wet ingredients
Add the egg and pour in the lukewarm milk (or water). Mix everything together with a spoon until well combined.
The batter should be thick but still slightly runny. - Let the batter rise
Cover the bowl with a cotton cloth and place it in a warm spot for at least 30 minutes.
Once bubbles appear on the surface, the batter is ready. - Fry the pancakes
Heat a large frying pan over medium heat and lightly grease it with coconut oil.
Spoon 1–2 tablespoons of batter per pancake onto the pan.
Cook until golden
Fry until golden on the bottom (check by gently lifting). Flip and cook for another 1–2 minutes until fully done.

This recipe yields 12–14 pancakes. For a smaller batch, simply halve the ingredients.
