Ingredients
- 1 kg light spelt flour (type 650)
- 300 g ground almonds
- 300 g soft butter
- 300 g unrefined sugar (or coconut sugar or date sugar)
- 45 g powdered nutmeg
- 4,5 g powdered Ceylon cinnamon
- 10 g powdered cloves
- 4 eggs
- ½ tsp salt
- water or milk, as needed to adjust dough consistency
Instructions
1. Mix the dough:
In a large bowl, combine flour, ground almonds, sugar, salt, spices, butter and eggs. Mix until all ingredients come together into a smooth, firm dough. Add a little water or milk if the dough feels too dry.
2. Rest:
Let the dough rest in a cool place for about 1 hour to allow the flavors to blend.
3. Shape:
Roll out the dough to about ½ cm thickness and cut out cookies using your favorite shapes.
4. Bake:
Place the cookies on a parchment-lined baking tray and bake in a preheated oven at 375°F (190°C) for 20–25 minutes, until lightly golden.
5. Cool and enjoy:
Allow to cool completely before storing. The cookies taste even better after a day or two as the spices mellow and deepen in flavor.
